Pizza Hot Pockets

Ingredients:

For the Dough:

  • 2 ¼ tsp active dry yeast
  • 1 tbsp sugar
  • ¾ cup warm water
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp olive oil

For the Filling:

  • 1 cup pizza sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup mini pepperoni or chopped pepperoni
  • 1 tsp Italian seasoning

For Topping:

  • 1 egg, beaten
  • 1 tbsp grated Parmesan cheese
  • ½ tsp garlic powder

Instructions:

  1. In a bowl, combine warm water, yeast, and sugar. Let sit 5 minutes until foamy.
  2. Mix in flour, salt, and olive oil until a dough forms. Knead 5–7 minutes until smooth. Cover and let rise 1 hour.
  3. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  4. Divide dough into 4 equal portions. Roll each into a rectangle.
  5. Spread pizza sauce on one half of each rectangle, leaving a border around the edges.
  6. Top with mozzarella, pepperoni, and Italian seasoning.
  7. Fold dough over filling and press edges tightly with a fork to seal. Cut small slits on top for steam vents.
  8. Brush with beaten egg and sprinkle with Parmesan and garlic powder.
  9. Bake 15–18 minutes until golden brown.
  10. Let cool slightly before serving.
