Lavender Honey Macaron Recipe
Ingredients:

For the Macaron Shells:
- 1 cup almond flour
- 1 1/2 cups powdered sugar
- 3 large egg whites (room temperature)
- 1/4 cup granulated sugar
- 1/2 teaspoon lavender extract
- Purple food coloring (optional)

For the Filling:
- 1/2 cup unsalted butter (softened)
- 1/4 cup honey
- 1 teaspoon dried culinary lavender, finely ground
- 1 cup powdered sugar

Prepare Macaron Batter:
- Sift almond flour and powdered sugar together.
- Beat egg whites to soft peaks, then gradually add granulated sugar. Continue to beat until stiff peaks form. Add lavender extract and food coloring.
- Fold dry ingredients into the meringue in batches. Mix until the batter flows like lava.

Pipe and Bake:
- Pipe 1-inch rounds onto parchment-lined baking sheets. Tap trays to release air bubbles. Let rest 30 minutes until a skin forms.
- Bake at 300°F (150°C) for 15-18 minutes. Cool completely.

Make the Filling:
- Beat butter until creamy. Add honey, ground lavender, and powdered sugar. Mix until smooth.

- Pipe filling onto one shell and sandwich with another.
