Lavender Honey Macaron Recipe

Ingredients:

  • For the Macaron Shells:

    • 1 cup almond flour
    • 1 1/2 cups powdered sugar
    • 3 large egg whites (room temperature)
    • 1/4 cup granulated sugar
    • 1/2 teaspoon lavender extract
    • Purple food coloring (optional)
  • For the Filling:

    • 1/2 cup unsalted butter (softened)
    • 1/4 cup honey
    • 1 teaspoon dried culinary lavender, finely ground
    • 1 cup powdered sugar

Instructions:

  1. Prepare Macaron Batter:

    • Sift almond flour and powdered sugar together.
    • Beat egg whites to soft peaks, then gradually add granulated sugar. Continue to beat until stiff peaks form. Add lavender extract and food coloring.
    • Fold dry ingredients into the meringue in batches. Mix until the batter flows like lava.
  2. Pipe and Bake:

    • Pipe 1-inch rounds onto parchment-lined baking sheets. Tap trays to release air bubbles. Let rest 30 minutes until a skin forms.
    • Bake at 300°F (150°C) for 15-18 minutes. Cool completely.
  3. Make the Filling:

    • Beat butter until creamy. Add honey, ground lavender, and powdered sugar. Mix until smooth.
  4. Assemble:

    • Pipe filling onto one shell and sandwich with another.
