Cinnamon Roll Cookie Recipe
For the Cookie Dough:
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 2 teaspoons vanilla extract
For the Cinnamon Filling:
- 1/4 cup unsalted butter, melted
- 3/4 cup brown sugar, packed
- 2 tablespoons ground cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons milk
- 1/2 teaspoon vanilla extract

Preheat the Oven:
- Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Prepare the Cookie Dough:
- In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.

Prepare the Cinnamon Filling:
- In a small bowl, mix together the melted butter, brown sugar, and ground cinnamon until well combined. Set aside.

Assemble the Cookies:
- Divide the cookie dough in half. Roll out each half on a lightly floured surface into a rectangle, about 1/4 inch thick.
- Spread half of the cinnamon filling evenly over each rectangle of dough, leaving a small border around the edges.
- Starting from one long side, tightly roll up each rectangle of dough into a log.
- Wrap the logs in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.

- Once chilled, unwrap the cookie dough logs and slice them into 1/4 to 1/2-inch thick rounds.
- Place the cookie slices onto the prepared baking sheets, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.

Prepare the Glaze:
- While the cookies are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.

- Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack.
- Drizzle the glaze over the warm cookies using a spoon or piping bag.
