Cinnamon Roll Cookie Recipe

For the Cookie Dough:

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract

For the Cinnamon Filling:

  • 1/4 cup unsalted butter, melted
  • 3/4 cup brown sugar, packed
  • 2 tablespoons ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.
  2. Prepare the Cookie Dough:

    • In a mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
    • In another large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Beat in the egg and vanilla extract until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  3. Prepare the Cinnamon Filling:

    • In a small bowl, mix together the melted butter, brown sugar, and ground cinnamon until well combined. Set aside.
  4. Assemble the Cookies:

    • Divide the cookie dough in half. Roll out each half on a lightly floured surface into a rectangle, about 1/4 inch thick.
    • Spread half of the cinnamon filling evenly over each rectangle of dough, leaving a small border around the edges.
    • Starting from one long side, tightly roll up each rectangle of dough into a log.
    • Wrap the logs in plastic wrap and chill in the refrigerator for at least 30 minutes to firm up.
  5. Slice and Bake:

    • Once chilled, unwrap the cookie dough logs and slice them into 1/4 to 1/2-inch thick rounds.
    • Place the cookie slices onto the prepared baking sheets, spacing them about 2 inches apart.
    • Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown.
  6. Prepare the Glaze:

    • While the cookies are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract in a small bowl until smooth.
  7. Glaze the Cookies:

    • Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack.
    • Drizzle the glaze over the warm cookies using a spoon or piping bag.
  8. Serve and Enjoy:

    • Serve the cinnamon roll cookies warm or at room temperature. Enjoy the delicious swirls of cinnamon filling and sweet glaze in every bite!

Note: Store any leftover cookies in an airtight container at room temperature for up to 5 days. The cookies can also be frozen for longer storage. Allow them to come to room temperature before serving.
