Blueberry Cake Recipe

Ingredients:

For the Cake:

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 1/2 cups fresh blueberries

For the Streusel Topping:

  • 1/4 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons cold unsalted butter, cut into small pieces
  • 1/2 teaspoon ground cinnamon

For the Glaze (Optional):

  • 1/2 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions:

1. Preheat the Oven:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

2. Make the Streusel Topping:

  1. In a small bowl, combine the flour, sugar, cold butter pieces, and ground cinnamon. Use a pastry cutter or fork to mix the ingredients until crumbly. Set aside.

3. Prepare the Cake Batter:

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs, one at a time, until well combined. Mix in the vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the sour cream, and mixing until just combined. Be careful not to overmix.
  5. Gently fold in the fresh blueberries until evenly distributed throughout the batter.

4. Assemble and Bake:

  1. Pour the batter into the prepared cake pan and spread it out evenly.
  2. Sprinkle the streusel topping over the batter, covering it evenly.
  3. Bake the cake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  4. Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

5. Optional Glaze:

  1. In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk if needed.
  2. Drizzle the glaze over the cooled cake.

6. Serve:

  1. Slice and serve the blueberry cake on its own or with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
