Egg Fried Rice Recipe

Ingredients:

  • 2 cups cooked rice (white or brown)
  • 2 eggs, beaten
  • 1 cup frozen mixed vegetables
  • 2-3 tablespoons soy sauce
  • 2 green onions, chopped
  • 1 tablespoon vegetable oil (optional)
  • Salt and pepper to taste

Instructions:

  1. Scramble Eggs:

    • Heat a large skillet or wok over medium heat. If desired, add vegetable oil to prevent sticking.
    • Pour the beaten eggs into the skillet and cook, stirring gently, until scrambled and fully cooked. Remove the scrambled eggs from the skillet and set aside.
  2. Cook Vegetables and Rice:

    • In the same skillet, add the frozen mixed vegetables. Cook them for a few minutes until they are thawed and heated through.

  3. Add Soy Sauce:

    • Pour soy sauce over the rice and vegetable mixture. Stir until the soy sauce is evenly distributed and everything is coated.
  4. Combine with Eggs:

    • Return the scrambled eggs to the skillet with the rice and vegetables. Stir gently to incorporate the eggs throughout the mixture.
  5. Heat Through:

    • Continue cooking for a few more minutes, stirring occasionally, until everything is heated through.
  6. Season and Garnish:

    • Season the fried rice with salt and pepper to taste. Sprinkle chopped green onions over the top as a garnish.
  7. Serve:

    • Transfer the egg fried rice to serving plates or bowls. Serve hot as a delicious and satisfying meal!
