Baked Key Lime Pie Pudding
Ingredients:

1 cup graham cracker crumbs

3 tbsp unsalted butter, melted

2 tbsp granulated sugar

1 can (14 oz) sweetened condensed milk

3 large eggs

1/2 cup key lime juice (or regular lime juice)

1 tbsp lime zest

1 cup whole milk

1 tsp vanilla extract
Instructions:

Preheat oven to 350°F. Lightly grease a baking dish.

In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press evenly into the bottom of the baking dish.

In another bowl, whisk condensed milk, eggs, key lime juice, lime zest, milk, and vanilla until smooth.

Pour the mixture over the graham cracker crust.

Place baking dish in a larger pan and add hot water halfway up the sides to create a water bath.

Bake 40–45 minutes, until pudding is just set but slightly jiggly in the center.

Remove from oven and cool completely, then refrigerate at least 2 hours before serving.
