Almond Joy Cookies

Ingredients:

  • 1 cup unsalted butter, softened

  • ¾ cup granulated sugar

  • ¾ cup brown sugar, packed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 ¼ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

  • 1 cup sweetened shredded coconut

  • 1 cup chocolate chips

  • ¾ cup chopped almonds

Instructions:

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.

  2. Cream butter, granulated sugar, and brown sugar until light and fluffy.

  3. Mix in eggs and vanilla extract.

  4. In a separate bowl, whisk flour, baking soda, and salt.

  5. Gradually add dry ingredients to wet ingredients until combined.

  6. Fold in shredded coconut, chocolate chips, and chopped almonds.

  7. Scoop dough onto baking sheets, spacing 2 inches apart.

  8. Bake 10–12 minutes until edges are lightly golden.

  9. Cool on baking sheets briefly, then transfer to a wire rack.
