Wheat-Free Muffins

Ingredients:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 cup honey or maple syrup
  • 4 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, combine all dry ingredients.
  3. In a separate bowl, whisk eggs, honey, applesauce, and vanilla.
  4. Stir wet ingredients into dry until combined.
  5. Spoon into muffin tin and bake for 20-25 minutes or until a toothpick comes out clean.
