Crockpot Chicken and Vegetable Stew

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into cubes
  • 3 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 cup sliced carrots
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Instructions:

  • Place chicken, cauliflower, broccoli, carrots, onion, and garlic in the crockpot.
  • Pour chicken broth over the ingredients.
  • Add thyme, rosemary, salt, and pepper. Stir well.
  • Cook on low for 6-8 hours or until chicken is cooked through and vegetables are tender.
  • Adjust seasoning if needed before serving.
