Crockpot Chicken and Vegetable Stew
Ingredients:
- 1 pound boneless, skinless chicken breasts, cut into cubes
- 3 cups cauliflower florets
- 2 cups broccoli florets
- 1 cup sliced carrots
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions:
- Place chicken, cauliflower, broccoli, carrots, onion, and garlic in the crockpot.
- Pour chicken broth over the ingredients.
- Add thyme, rosemary, salt, and pepper. Stir well.
- Cook on low for 6-8 hours or until chicken is cooked through and vegetables are tender.
- Adjust seasoning if needed before serving.
