One Pan Lemon Garlic Chicken with Veggies Recipe

Ingredients:

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried oregano
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 pound baby potatoes, halved
  • 2 cups broccoli florets
  • 1 cup cherry tomatoes, halved
  • Fresh parsley, chopped, for garnish

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).

  2. Season the Chicken: Season both sides of the chicken breasts with salt and black pepper, to taste.

  3. Sear the Chicken: In a large oven-safe skillet or pan, heat 1 tablespoon of olive oil over medium-high heat. Add the seasoned chicken breasts to the skillet and sear for 2-3 minutes on each side, until golden brown. Remove the chicken from the skillet and set aside.

  4. Prepare the Lemon Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic, dried thyme, dried rosemary, and dried oregano. Cook for 1-2 minutes, until fragrant. Stir in the lemon zest and lemon juice, scraping up any browned bits from the bottom of the skillet.

  5. Add the Veggies: Add the halved baby potatoes to the skillet, tossing to coat in the lemon garlic sauce. Cook for 5 minutes, stirring occasionally, until the potatoes start to soften slightly.

  6. Return the Chicken: Return the seared chicken breasts to the skillet, nestling them among the potatoes and veggies. Arrange the broccoli florets and halved cherry tomatoes around the chicken.

  7. Bake in the Oven: Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the veggies are tender.
