Pistachio Cardamom Shortbread Cookies

Ingredients:

  • 1 cup unsalted butter, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ½ cup finely chopped pistachios
  • 1 teaspoon ground cardamom
  • ¼ teaspoon salt

Instructions:

  1. Prepare the Dough:

    • Beat butter and powdered sugar until light and fluffy. Mix in vanilla.
    • In a separate bowl, whisk flour, pistachios, cardamom, and salt. Gradually combine with wet ingredients.
  2. Chill:

    • Shape dough into a log, wrap in plastic, and refrigerate for 1 hour.
  3. Bake:

    • Preheat oven to 350°F (175°C). Slice dough into ¼-inch rounds and place on a baking sheet.
    • Bake for 10–12 minutes, or until edges are golden.
