Pistachio Cardamom Shortbread Cookies
Ingredients:
- 1 cup unsalted butter, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- ½ cup finely chopped pistachios
- 1 teaspoon ground cardamom
- ¼ teaspoon salt

Prepare the Dough:
- Beat butter and powdered sugar until light and fluffy. Mix in vanilla.
- In a separate bowl, whisk flour, pistachios, cardamom, and salt. Gradually combine with wet ingredients.

- Shape dough into a log, wrap in plastic, and refrigerate for 1 hour.

- Preheat oven to 350°F (175°C). Slice dough into ¼-inch rounds and place on a baking sheet.
- Bake for 10–12 minutes, or until edges are golden.
