Rustic Peach Galette

Ingredients:

For the Galette Dough:

  • 1 1/4 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1/2 cup unsalted butter, cold and cut into small cubes
  • 3-4 tablespoons ice water

For the Peach Filling:

  • 4-5 ripe peaches, thinly sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • Zest of 1 lemon
  • 1 tablespoon unsalted butter, cut into small pieces

For Assembly:

  • 1 egg, beaten (for egg wash)
  • Turbinado sugar (for sprinkling)
  • Vanilla ice cream (optional, for serving)

Instructions:

  1. Prepare the Galette Dough:

    • In a large mixing bowl, whisk together the flour, salt, and sugar. Add the cold, cubed butter to the flour mixture.
    • Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.
    • Gradually add the ice water, one tablespoon at a time, and mix with a fork until the dough just begins to come together. Be careful not to overwork the dough. If the dough seems too dry, add an additional tablespoon of ice water as needed.
    • Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes while you prepare the filling.
  2. Prepare the Peach Filling:

    • In a large bowl, combine the sliced peaches, granulated sugar, cornstarch, ground cinnamon, ground nutmeg, lemon juice, and lemon zest. Toss until the peaches are evenly coated in the mixture. Set aside.
  3. Assemble the Galette:

    • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
    • On a lightly floured surface, roll out the chilled galette dough into a rough circle, about 12 inches in diameter and 1/8 inch thick.
    • Carefully transfer the rolled-out dough to the prepared baking sheet.
    • Arrange the peach slices in the center of the dough, leaving a border of about 2 inches around the edges. Fold the edges of the dough over the filling, pleating as necessary to create a rustic, free-form shape.
    • Dot the top of the peach filling with small pieces of unsalted butter.
  4. Bake the Galette:

    • Brush the edges of the dough with beaten egg and sprinkle with turbinado sugar for a golden, crispy crust.
    • Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the peach filling is bubbly and tender.
  5. Serve:

    • Remove the galette from the oven and let it cool slightly on the baking sheet before transferring to a wire rack to cool completely.
    • Serve the rustic peach galette warm or at room temperature, optionally topped with a scoop of vanilla ice cream for a delicious summer treat!
