Roasted Potato Leek Soup Recipe
Ingredients:
- 4 large potatoes, peeled and diced
- 2 leeks, cleaned and sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup heavy cream (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh thyme or chives for garnish
Instructions:
- Roast Potatoes: Toss diced potatoes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 25-30 minutes until tender.
- Cook Leeks & Onion: In a large pot, sauté leeks, onion, and garlic until soft.
- Combine & Simmer: Add roasted potatoes, broth, and bring to a boil. Simmer for 10-15 minutes.
- Blend: Use an immersion blender or regular blender to puree the soup until smooth. Stir in heavy cream if using.
- Serve: Garnish with fresh herbs and serve warm.
