Roasted Potato Leek Soup Recipe

Ingredients:

  • 4 large potatoes, peeled and diced
  • 2 leeks, cleaned and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh thyme or chives for garnish

Instructions:

  1. Roast Potatoes: Toss diced potatoes with olive oil, salt, and pepper. Roast at 400°F (200°C) for 25-30 minutes until tender.
  2. Cook Leeks & Onion: In a large pot, sauté leeks, onion, and garlic until soft.
  3. Combine & Simmer: Add roasted potatoes, broth, and bring to a boil. Simmer for 10-15 minutes.
  4. Blend: Use an immersion blender or regular blender to puree the soup until smooth. Stir in heavy cream if using.
  5. Serve: Garnish with fresh herbs and serve warm.
