Simple Muffin Mix

Ingredients:

2 cups all-purpose flour

½ cup  granulated sugar

2 teaspoons baking powder

½ teaspoon salt

¾ cup milk, room temperature

½ cup  unsalted butter melted and cooled

2 large eggs, room temperature

2 tablespoons coarse sugar, optional

Directions:

  1. Heat the oven to 350°F. Get a muffin pan and put paper liners in it; set it aside.
  2. In a small bowl, mix the flour, sugar, baking powder, and salt.
  3. In a medium bowl, mix the milk, butter, and eggs until it's all combined.
  4. Put the flour mix into the bowl with the milk mix and stir with a silicone spatula until it's just mixed.
  5. (optional step) Add well-drained berries, peeled and chopped nuts, or any other optional inclusions in this step.
  6. Share the batter evenly between the muffin cups and put coarse sugar on top if you want.
  7. Bake for 20-25 minutes or until a toothpick stuck in the center comes out with a few wet crumbs.
  8. Move the muffins to a wire rack to cool completely. They're best on the day they're made but you can keep them for later.
