Simple Muffin Mix
Ingredients:
2 cups all-purpose flour
½ cup granulated sugar
2 teaspoons baking powder
½ teaspoon salt
¾ cup milk, room temperature
½ cup unsalted butter melted and cooled
2 large eggs, room temperature
2 tablespoons coarse sugar, optional
Directions:
- Heat the oven to 350°F. Get a muffin pan and put paper liners in it; set it aside.
- In a small bowl, mix the flour, sugar, baking powder, and salt.
- In a medium bowl, mix the milk, butter, and eggs until it's all combined.
- Put the flour mix into the bowl with the milk mix and stir with a silicone spatula until it's just mixed.
- (optional step) Add well-drained berries, peeled and chopped nuts, or any other optional inclusions in this step.
- Share the batter evenly between the muffin cups and put coarse sugar on top if you want.
- Bake for 20-25 minutes or until a toothpick stuck in the center comes out with a few wet crumbs.
- Move the muffins to a wire rack to cool completely. They're best on the day they're made but you can keep them for later.
