Key Lime Cookies with Creamy Frosting
Ingredients:
For the Cookies:

2 cups all-purpose flour

2 cups powdered sugar

2 tablespoons key lime juice

Instructions:
For the Cookies:

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.

In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.

Beat in the egg until well combined.

Add the key lime zest, key lime juice, and vanilla extract to the wet ingredients. Mix well. If desired, add a few drops of green food coloring to achieve a vibrant color.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
For the Frosting:

In a medium bowl, beat the softened butter until creamy.

Gradually add the powdered sugar, key lime juice, key lime zest, and a pinch of salt. Beat until smooth and well combined.

If desired, add a few drops of green food coloring to the frosting and mix until the desired color is achieved.

Once the cookies are completely cooled, spread or pipe the frosting on top of each cookie.
