Quick and Easy Pancake Mix

Ingredients:


1 ½ cups all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon of fine sea or table salt, reduce to 1/4 teaspoon if sensitive to salt

1 ¼ cups milk, dairy or non-dairy

1 large egg

4 tablespoons unsalted butter, melted, plus more for skillet

1 teaspoon vanilla extract

 

Directions:

1. Mix flour, sugar, baking powder, and salt in a medium-sized bowl.

2. Warm up the milk in the microwave or on the stove until it's just warm, not hot. You should be able to put your finger in it for 10 seconds.

3. Combine the warmed milk, egg, melted butter, and vanilla extract by whisking them together. (Warming the milk a bit helps the melted butter mix in smoothly instead of forming small lumps).

4. Heat a big skillet (or use a griddle) on medium heat. It's ready when water droplets dance around and disappear on the surface.

5. Make a hole in the middle of the flour mix, pour in the milk mix, and use a fork to stir until there are no more flour clumps. It's okay if there are small lumps – don't stir too much.

6. Optionally, lightly brush the skillet with melted butter (not needed if your pan is good quality). Use a 1/4 cup measuring cup to spoon batter onto the skillet. Gently spread it into a 4-inch circle.

7. Flip the pancake when the edges seem dry, and bubbles show up and pop on top (about 2 minutes). Once flipped, cook for another 1 to 2 minutes until it's lightly browned and cooked in the middle. Serve right away with warm syrup, butter, and berries.
