Nutella, Peanut Butter, and Banana Pancake Recipe

Ingredients:

  • 1 1/4 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Nutella (hazelnut spread)
  • 1-2 ripe bananas, sliced
  • Creamy peanut butter
  • Maple syrup or honey, for serving

Instructions:

  1. Mix Dry Ingredients:

    • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Combine Wet Ingredients:

    • In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. The batter should be slightly lumpy.
  4. Preheat Griddle or Pan:

    • Preheat a griddle or non-stick skillet over medium heat. Lightly grease the cooking surface with butter or oil.
  5. Cook Pancakes:

    • Pour about 1/4 cup of batter onto the preheated griddle for each pancake.
  6. Add Toppings:

    • Once bubbles form on the surface of the pancake, place a few banana slices onto each pancake.
  7. Cook Until Bubbles Form:

    • Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
  8. Flip and Cook:

    • Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until cooked through and lightly browned on the bottom.
  9. Keep Warm:

    • Transfer the cooked pancakes to a plate and cover with aluminum foil to keep them warm while you cook the remaining pancakes.
  10. Serve:

    • Spread a layer of Nutella on top of each pancake, followed by a dollop of creamy peanut butter.
  11. Stack and Serve:

    • Stack the Nutella, banana, and peanut butter pancakes on a serving plate.
  12. Drizzle:

    • Drizzle with maple syrup or honey just before serving.
