Chickpea and Curry Recipe

Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- 4 cups fresh spinach
- 1 onion, diced
- 3 garlic cloves, minced
- 1-inch piece ginger, grated
- 1 can (14 oz) coconut milk
- 2 tsp curry powder
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/4 tsp cayenne pepper (optional)
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant.
- Add curry powder, cumin, turmeric, and cayenne. Cook for 1 minute.
- Stir in coconut milk and simmer for 5 minutes.
- Add chickpeas and spinach. Cook until spinach is wilted.
- Season with salt and pepper. Serve with rice or flatbread.
