Chickpea and Curry Recipe

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 4 cups fresh spinach
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 1 can (14 oz) coconut milk
  • 2 tsp curry powder
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a pan over medium heat. Sauté onion, garlic, and ginger until fragrant.
  2. Add curry powder, cumin, turmeric, and cayenne. Cook for 1 minute.
  3. Stir in coconut milk and simmer for 5 minutes.
  4. Add chickpeas and spinach. Cook until spinach is wilted.
  5. Season with salt and pepper. Serve with rice or flatbread.
