Coffee Flavored Pancakes with Poached Pears Recipe

Ingredients:

For the Coffee Flavored Pancakes:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon instant coffee granules
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • Additional butter or oil for cooking

For the Poached Pears:

  • 2 ripe pears, peeled, halved, and cored
  • 2 cups water
  • 1/2 cup granulated sugar
  • 1 cinnamon stick
  • 1 teaspoon vanilla extract
  • Zest of 1 orange (optional)

Optional Toppings:

  • Maple syrup
  • Whipped cream or Greek yogurt
  • Chopped nuts (such as walnuts or pecans)

Instructions:

  1. Prepare the Poached Pears:

    • In a saucepan, combine the water, granulated sugar, cinnamon stick, vanilla extract, and orange zest (if using). Bring to a boil over medium heat.
    • Add the pear halves to the saucepan, making sure they are submerged in the liquid. Reduce the heat to low and simmer for about 15-20 minutes, or until the pears are tender when pierced with a fork.
    • Once the pears are poached, remove them from the liquid and set aside. Discard the cinnamon stick and orange zest. Reserve the poaching liquid for serving, if desired.
  2. Make the Coffee Flavored Pancakes:

    • In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and instant coffee granules until well combined.
    • In a separate bowl, whisk together the milk, egg, and melted butter until smooth.
    • Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. The batter should be slightly lumpy.
  3. Cook the Pancakes:

    • Preheat a griddle or non-stick skillet over medium heat. Lightly grease the cooking surface with butter or oil.
    • Pour about 1/4 cup of pancake batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.
    • Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until cooked through and lightly browned on the bottom. Transfer the cooked pancakes to a plate and cover with aluminum foil to keep warm while you cook the remaining pancakes.
  4. Assemble and Serve:

    • Serve the coffee flavored pancakes warm, topped with the poached pears.
    • Optionally, drizzle with maple syrup and serve with a dollop of whipped cream or Greek yogurt on the side. Sprinkle with chopped nuts for added crunch and flavor.
    • If desired, you can also spoon some of the reserved poaching liquid over the pancakes for extra flavor.
  5. Enjoy:

    • Enjoy these elegant and flavorful coffee flavored pancakes with poached pears as a delightful breakfast or brunch option!

Note: Feel free to adjust the amount of instant coffee granules in the pancake batter according to your desired level of coffee flavor. You can also experiment with different varieties of pears for poaching, such as Bosc or Anjou pears.
