Banana Nut Bread Recipe
Ingredients:
2 cups (240 g) all-purpose flour
1½ teaspoons baking soda
Pinch salt
1 cup (198 g) granulated sugar
½ cup (99 g) vegetable oil
2 eggs
1 teaspoon vanilla extract
4 medium ripe bananas, mashed (about 1⅓ cups or 303 grams)
1 cup (113 g) coarsely chopped walnuts
Directions:
1. Heat the oven to 350 degrees Fahrenheit. Grease two loaf pans that are 8 inches by 4 inches; set them aside.
2. In a medium bowl, mix together the flour, baking soda, and salt; set it aside.
3. In a big bowl, mix together the sugar, oil, eggs, and vanilla extract.
4. Add the bananas and stir gently to mix. Add the flour mixture and stir until everything is mixed well.
5. Use a rubber spatula to fold in the walnuts.
6. Split the mixture between the two loaf pans. Bake for 35 to 45 minutes or until a thin knife put in the middle comes out clean. If the loaves start to get too dark before they are done in the middle, cover them with foil.
7. Let them cool in the pans for 10 minutes, then take them out onto a wire rack to cool completely.
The bread can be stored, wrapped tightly in plastic wrap, at room temperature for up to 5 days. To freeze, wrap in plastic wrap then in aluminum foil and freezer for up to 3 months.
