Mint Chocolate Chip Cake
Ingredients:

2 1/2 cups all-purpose flour

1 1/2 cups sugar

1/2 cup unsweetened cocoa powder

2 teaspoons baking soda

1/2 teaspoon salt

1 cup buttermilk

1/2 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

For the Mint Buttercream:

1 cup unsalted butter, softened

4 cups powdered sugar

2–3 tablespoons heavy cream

1 teaspoon peppermint extract

Green food coloring (optional)

For Garnish:

1/2 cup mini chocolate chips (or white chocolate mint chips)

Chocolate shavings (optional)

Instructions:

Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.

Add buttermilk, oil, eggs, and vanilla. Mix until smooth.

Divide batter between pans and bake for 30-35 minutes. Cool completely.

For buttercream, beat butter until fluffy. Gradually add powdered sugar, cream, peppermint extract, and food coloring until smooth.

Layer and frost the cake with buttercream. Sprinkle chocolate chips between layers and on top.
