Linzer Cookies with Lemon Filling Recipe
Ingredients:
For the Cookies:

1 cup unsalted butter, softened

½ cup granulated sugar

1 large egg yolk

1 tsp vanilla extract

2 cups all-purpose flour

1 cup almond flour
-
½ tsp cinnamon
-
¼ tsp salt

Powdered sugar for dusting
For the Lemon Filling:

½ cup lemon curd (store-bought or homemade)
-
1 tsp lemon zest (optional for extra brightness)
Instructions:

In a bowl, cream butter and sugar until light and fluffy.

Mix in the egg yolk and vanilla.

In another bowl, whisk flour, almond flour, cinnamon, and salt.

Add dry ingredients to the butter mixture and mix until a soft dough forms.

Divide dough in half, flatten into disks, and chill 1 hour.

Preheat oven to 350°F. Line baking sheets with parchment paper.

Roll dough to ¼-inch thickness on a lightly floured surface.

Cut out cookies with a round cutter. Cut center holes in half the cookies for the tops.

Transfer to baking sheets and bake 10–12 minutes or until edges are lightly golden.

Cool completely.

Dust the cut-out tops with powdered sugar.

Spread a thin layer of lemon curd on each whole cookie.

Place the sugar-dusted tops on the filled bottoms to sandwich.

Allow to set before serving.
