Pistachio Pancake Recipe
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup shelled pistachios, finely chopped
- 1 large egg
- 1 cup buttermilk
- 2 tablespoons unsalted butter, melted
- 1/2 teaspoon vanilla extract
- Green food coloring (as desired)
- Additional butter or oil for cooking
- Maple syrup and additional chopped pistachios for serving (optional)
Instructions:

Prepare Dry Ingredients:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Add Pistachios and Food Coloring:
- Stir in the finely chopped pistachios until evenly distributed throughout the dry mixture. Add green food coloring to achieve the desired shade of green, mixing well.

Prepare Wet Ingredients:
- In another bowl, whisk together the egg, buttermilk, melted butter, and vanilla extract until smooth.

Combine Wet and Dry Ingredients:
- Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined, being careful not to overmix. A few lumps in the batter are okay.

- Preheat a griddle or non-stick skillet over medium heat. Lightly grease the cooking surface with butter or oil.

- Pour about 1/4 cup of batter onto the preheated griddle for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.

- Carefully flip the pancakes using a spatula and cook for an additional 1-2 minutes, or until golden brown on the bottom and cooked through.
