Pomegranate Pistachio Tart Recipe

Ingredients:

For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 1 tablespoon ice water

For the Filling:

  • 1 cup shelled pistachios, finely ground
  • 1/4 cup granulated sugar
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • Pinch of salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1/2 cup honey
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract

For the Topping:

  • 1 cup fresh pomegranate arils (seeds)
  • 2 tablespoons chopped pistachios

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9-inch tart pan with a removable bottom.

  2. In a food processor, combine the flour, sugar, and salt for the crust. Add the cold cubed butter and pulse until the mixture resembles coarse crumbs.

  3. In a small bowl, whisk together the egg yolk and ice water. Add this mixture to the flour mixture and pulse until the dough comes together.

  4. Press the dough evenly into the bottom and up the sides of the prepared tart pan. Prick the bottom of the crust with a fork and place it in the refrigerator to chill for 15 minutes.
