Slow Cooker Lemon Butter Chicken & Potatoes

Ingredients:

  • 4 boneless, skinless chicken breasts or thighs
  • 1 lb baby potatoes, halved
  • 4 tbsp unsalted butter, melted
  • 1/4 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Place halved potatoes in the bottom of the slow cooker.
  2. Season chicken with salt, pepper, and paprika, then place on top of the potatoes.
  3. In a bowl, whisk together melted butter, chicken broth, lemon juice, lemon zest, garlic, thyme, and rosemary.
  4. Pour mixture evenly over the chicken and potatoes.
  5. Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and potatoes are cooked through.
  6. Spoon sauce over the chicken before serving and garnish with fresh parsley.
