Slow Cooker Lemon Butter Chicken & Potatoes
Ingredients:
- 4 boneless, skinless chicken breasts or thighs
- 1 lb baby potatoes, halved
- 4 tbsp unsalted butter, melted
- 1/4 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tbsp lemon zest
- 4 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Place halved potatoes in the bottom of the slow cooker.
- Season chicken with salt, pepper, and paprika, then place on top of the potatoes.
- In a bowl, whisk together melted butter, chicken broth, lemon juice, lemon zest, garlic, thyme, and rosemary.
- Pour mixture evenly over the chicken and potatoes.
- Cover and cook on low for 6–7 hours or high for 3–4 hours, until chicken is tender and potatoes are cooked through.
- Spoon sauce over the chicken before serving and garnish with fresh parsley.
