Jalapeño Popper Corn Fritters

Ingredients:

  • 1 cup corn kernels (fresh or frozen, thawed)

  • 1 jalapeño, finely diced (seeds removed for less heat)

  • 1/2 cup shredded cheddar cheese

  • 1/4 cup cream cheese, softened

  • 1/3 cup all-purpose flour

  • 1 large egg

  • 1/4 tsp garlic powder

  • 1/4 tsp smoked paprika

  • Salt and pepper to taste

  • Oil for frying

Instructions:

  1. In a bowl, mix corn, jalapeño, cheddar, cream cheese, flour, egg, garlic powder, paprika, salt, and pepper until well combined.

  2. Heat oil in a skillet over medium heat. Drop spoonfuls of the batter into the hot oil.

  3. Flatten slightly and fry for 3-4 minutes per side until golden and crisp.

  4. Remove to a paper towel-lined plate to drain excess oil.

  5. Serve warm with sour cream or ranch dressing for dipping.
