Jalapeño Popper Corn Fritters

Ingredients:

1 cup corn kernels (fresh or frozen, thawed)

1 jalapeño, finely diced (seeds removed for less heat)

1/2 cup shredded cheddar cheese

1/4 cup cream cheese, softened

1/3 cup all-purpose flour

1 large egg

1/4 tsp garlic powder

1/4 tsp smoked paprika

Salt and pepper to taste

Oil for frying
Instructions:

In a bowl, mix corn, jalapeño, cheddar, cream cheese, flour, egg, garlic powder, paprika, salt, and pepper until well combined.

Heat oil in a skillet over medium heat. Drop spoonfuls of the batter into the hot oil.

Flatten slightly and fry for 3-4 minutes per side until golden and crisp.

Remove to a paper towel-lined plate to drain excess oil.
