Slow-Cooker Beef & Broccoli
Ingredients:
- 1 ½ lbs flank steak, thinly sliced against the grain
- 3 cups broccoli florets
- 1 cup beef broth
- ½ cup soy sauce
- ⅓ cup brown sugar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp cornstarch
- 2 tbsp water
- 1 tbsp sesame oil
- Optional: cooked rice for serving
Instructions:
- Place sliced beef in the slow cooker.
- In a bowl, whisk together beef broth, soy sauce, brown sugar, garlic, and ginger. Pour over the beef.
- Cover and cook on low for 5–6 hours or high for 2–3 hours, until beef is tender.
- In a small bowl, mix cornstarch and water to create a slurry. Stir into the slow cooker along with sesame oil.
- Add broccoli florets, cover, and cook an additional 20–30 minutes until broccoli is tender and sauce has thickened.
- Serve hot over rice if desired.
