Slow-Cooker Beef & Broccoli

Ingredients:

  • 1 ½ lbs flank steak, thinly sliced against the grain
  • 3 cups broccoli florets
  • 1 cup beef broth
  • ½ cup soy sauce
  • ⅓ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp sesame oil
  • Optional: cooked rice for serving

Instructions:

  1. Place sliced beef in the slow cooker.
  2. In a bowl, whisk together beef broth, soy sauce, brown sugar, garlic, and ginger. Pour over the beef.
  3. Cover and cook on low for 5–6 hours or high for 2–3 hours, until beef is tender.
  4. In a small bowl, mix cornstarch and water to create a slurry. Stir into the slow cooker along with sesame oil.
  5. Add broccoli florets, cover, and cook an additional 20–30 minutes until broccoli is tender and sauce has thickened.
  6. Serve hot over rice if desired.
