Parmesan Zucchini Fritters

Ingredients:

3 medium zucchinis, grated

1/2 tsp salt

1/3 cup grated Parmesan cheese

1/3 cup all-purpose flour (or gluten-free flour)

1 large egg

2 garlic cloves, minced

1/4 tsp black pepper

Olive oil for frying
Instructions:

Grate zucchini and sprinkle with salt. Let it sit for 10 minutes, then squeeze out excess moisture.

In a bowl, mix zucchini, Parmesan, flour, egg, garlic, and pepper.

Heat olive oil in a skillet over medium heat. Scoop batter into the pan and flatten into fritters.

Cook for 3-4 minutes per side until golden brown.
