Parmesan Zucchini Fritters

Ingredients:

  • 3 medium zucchinis, grated

  • 1/2 tsp salt

  • 1/3 cup grated Parmesan cheese

  • 1/3 cup all-purpose flour (or gluten-free flour)

  • 1 large egg

  • 2 garlic cloves, minced

  • 1/4 tsp black pepper

  • Olive oil for frying

Instructions:

  1. Grate zucchini and sprinkle with salt. Let it sit for 10 minutes, then squeeze out excess moisture.

  2. In a bowl, mix zucchini, Parmesan, flour, egg, garlic, and pepper.

  3. Heat olive oil in a skillet over medium heat. Scoop batter into the pan and flatten into fritters.

  4. Cook for 3-4 minutes per side until golden brown.

  5. Serve warm with your favorite dipping sauce.
