Buffalo Cauliflower Bites Recipe

Ingredients:

  • 1 head cauliflower, cut into florets
  • 1 cup all-purpose flour
  • 1 cup milk (or plant-based milk for a vegan option)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1/2 cup buffalo sauce (store-bought or homemade)
  • 2 tablespoons unsalted butter (or vegan butter), melted
  • Ranch or blue cheese dressing, for serving
  • Chopped fresh parsley or cilantro, for garnish (optional)

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Cauliflower:

    • Wash the cauliflower and cut it into bite-sized florets. Dry the florets thoroughly with paper towels to remove excess moisture.
  3. Prepare the Batter:

    • In a medium bowl, whisk together the all-purpose flour, milk, garlic powder, onion powder, paprika, salt, and pepper until smooth and well combined. The batter should have a thick consistency.
  4. Coat the Cauliflower:

    • Dip each cauliflower floret into the batter, making sure it's evenly coated on all sides. Allow any excess batter to drip off, then place the coated florets onto the prepared baking sheet in a single layer, leaving space between each piece.
  5. Bake the Cauliflower:

    • Bake in the preheated oven for 20-25 minutes, or until the cauliflower is tender and the batter is golden brown and crispy.
  6. Make the Buffalo Sauce:

    • In a small bowl, combine the buffalo sauce and melted butter. Stir until well mixed.
  7. Coat the Baked Cauliflower:

    • Once the cauliflower is baked, remove it from the oven and transfer it to a large mixing bowl. Pour the buffalo sauce mixture over the cauliflower and toss until all the florets are evenly coated.
  8. Return to the Oven:

    • Spread the coated cauliflower back onto the baking sheet and return it to the oven. Bake for an additional 5-10 minutes, or until the buffalo sauce is heated through and slightly caramelized.
  9. Serve:

    • Remove the buffalo cauliflower bites from the oven and transfer them to a serving plate. Serve hot with ranch or blue cheese dressing for dipping.
  10. Garnish (Optional):

    • Sprinkle the buffalo cauliflower bites with chopped fresh parsley or cilantro for a pop of color and freshness.
  11. Enjoy:

    • Enjoy these delicious and flavorful buffalo cauliflower bites as a tasty appetizer, snack, or even as a side dish. They're perfect for game days, parties, or any time you're craving a spicy and satisfying treat!

Note: You can adjust the amount of buffalo sauce and butter according to your desired level of spiciness and richness. Feel free to customize the seasoning and garnishes to suit your taste preferences.
