Cherry Almond Tart Recipe
Ingredients:
For the Tart Crust:
- 1 1/4 cups all-purpose flour
- 1/4 cup almond flour
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 1 large egg yolk
- 1-2 tablespoons ice water, if needed
For the Almond Filling:
- 1 cup almond flour
- 1/2 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon almond extract
For the Cherry Topping:
- 2 cups fresh cherries, pitted and halved
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice

Prepare the Tart Crust:
- In a food processor, combine the all-purpose flour, almond flour, and granulated sugar. Pulse a few times to mix.
- Add the cold, cubed butter to the flour mixture and pulse until the mixture resembles coarse crumbs.
- Add the egg yolk and pulse again until the dough starts to come together. If the dough seems too dry, add ice water, 1 tablespoon at a time, until it holds together when squeezed.
- Turn the dough out onto a lightly floured surface and gather it into a ball. Flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

- Preheat your oven to 375°F (190°C). Grease a 9-inch tart pan with a removable bottom.

Roll Out the Dough:
- On a lightly floured surface, roll out the chilled dough into a circle about 1/8 inch thick. Carefully transfer the dough to the prepared tart pan, pressing it into the bottom and up the sides. Trim any excess dough from the edges.

- In a mixing bowl, combine the almond flour, granulated sugar, softened butter, egg, and almond extract. Mix until smooth and well combined.
- Spread the almond filling evenly over the bottom of the prepared tart crust.

- In a separate bowl, toss the fresh cherry halves with granulated sugar, cornstarch, and lemon juice until well coated.

- Arrange the sugared cherry halves over the almond filling in the tart crust, distributing them evenly.

- Place the assembled tart on a baking sheet and bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the filling is set.

- Allow the cherry almond tart to cool in the tart pan for at least 15-20 minutes before removing it from the pan.
