Lemon Ricotta Honey Tart Recipe

Ingredients:

For the Tart Crust:

  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cut into cubes
  • 1 egg yolk
  • 1 tablespoon ice water

For the Filling:

  • 1 cup whole milk ricotta cheese
  • 1/2 cup mascarpone cheese
  • 1/3 cup honey
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 2 eggs
  • 1 teaspoon vanilla extract

For Garnish:

  • Sliced lemon zest
  • Fresh berries
  • Honey, for drizzling

Instructions:

1. Prepare the Tart Crust:

  1. In a food processor, combine the all-purpose flour and granulated sugar. Pulse a few times to mix.
  2. Add the cold, cubed butter to the flour mixture and pulse until the mixture resembles coarse crumbs.
  3. Add the egg yolk and ice water to the mixture and pulse until the dough comes together.
  4. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat the oven to 375°F (190°C).
  6. Roll out the chilled dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess dough from the edges. Prick the bottom of the crust with a fork.
  7. Line the crust with parchment paper and fill with pie weights or dried beans. Blind bake the crust for 15 minutes. Remove the parchment paper and weights and bake for an additional 5 minutes, or until lightly golden. Let the crust cool while you prepare the filling.

2. Prepare the Filling:

  1. In a mixing bowl, combine the whole milk ricotta cheese, mascarpone cheese, honey, lemon zest, lemon juice, eggs, and vanilla extract. Mix until smooth and well combined.
  2. Pour the filling into the pre-baked tart crust, spreading it out evenly.
  3. Return the tart to the oven and bake for 25-30 minutes, or until the filling is set and the edges are golden brown.
  4. Remove the tart from the oven and let it cool completely on a wire rack.

3. Garnish and Serve:

  1. Once the tart has cooled, garnish with sliced lemon zest and fresh berries.
  2. Drizzle the top of the tart with honey for an extra touch of sweetness.
  3. Slice and serve the Lemon Ricotta Honey Tart at room temperature.
  4. Enjoy this delightful dessert with a cup of tea or coffee!
