Peach & Pineapple Chipotle Salsa Recipe
Ingredients:
- 2 ripe peaches, peeled and diced
- 1 cup fresh pineapple, diced
- 1/2 cup red bell pepper, finely diced
- 1/4 cup red onion, finely diced
- 1-2 chipotle peppers in adobo sauce, minced
- 1 tbsp adobo sauce
- 1 jalapeño, seeded and minced (optional)
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
- 1 tbsp honey (optional, if fruit isn't very sweet)
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- In a large bowl, combine the peaches, pineapple, red bell pepper, red onion, chipotle peppers, jalapeño (if using), and cilantro.
- Add the lime juice, adobo sauce, honey (if using), cumin, salt, and black pepper.
- Gently stir until all ingredients are evenly coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Stir before serving and adjust seasoning with additional lime juice or salt if needed.
Serving Suggestions:
- Serve with tortilla chips.
- Spoon over grilled chicken, pork, fish, or shrimp.
- Use as a topping for tacos, burritos, or burgers.
- Pair with grilled sausages or roasted vegetables.
- Add to rice or grain bowls for a sweet and smoky kick.
