Peach & Pineapple Chipotle Salsa Recipe

Ingredients:

  • 2 ripe peaches, peeled and diced
  • 1 cup fresh pineapple, diced
  • 1/2 cup red bell pepper, finely diced
  • 1/4 cup red onion, finely diced
  • 1-2 chipotle peppers in adobo sauce, minced
  • 1 tbsp adobo sauce
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime
  • 1 tbsp honey (optional, if fruit isn't very sweet)
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. In a large bowl, combine the peaches, pineapple, red bell pepper, red onion, chipotle peppers, jalapeño (if using), and cilantro.
  2. Add the lime juice, adobo sauce, honey (if using), cumin, salt, and black pepper.
  3. Gently stir until all ingredients are evenly coated.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Stir before serving and adjust seasoning with additional lime juice or salt if needed.

Serving Suggestions:

  • Serve with tortilla chips.
  • Spoon over grilled chicken, pork, fish, or shrimp.
  • Use as a topping for tacos, burritos, or burgers.
  • Pair with grilled sausages or roasted vegetables.
  • Add to rice or grain bowls for a sweet and smoky kick.
