Lemon Pesto Penne Recipe
- 12 oz penne pasta
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup basil pesto
- 1/4 cup heavy cream (optional, for a creamier sauce)
- 1 lemon, zested and juiced
- 1/2 cup grated Parmesan cheese
- 1/4 cup reserved pasta water
- Salt and black pepper, to taste
- 2 tbsp chopped fresh basil
- Optional: grilled chicken, shrimp, or roasted cherry tomatoes
Instructions:
- Cook the penne according to package directions until al dente. Reserve 1/4 cup of the pasta water, then drain.
- Heat olive oil in a large skillet over medium heat. Add the garlic and cook for 30 seconds, until fragrant.
- Stir in the pesto, heavy cream (if using), lemon zest, and lemon juice. Cook for 1–2 minutes, stirring until smooth.
- Add the cooked penne and Parmesan cheese to the skillet. Toss to coat the pasta evenly.
- Add the reserved pasta water a little at a time until the sauce reaches your desired consistency.
- Season with salt and black pepper to taste.
- Garnish with fresh basil and additional Parmesan before serving.
Serving Suggestions:
- Top with sliced grilled chicken or sautéed shrimp for added protein.
- Serve with garlic bread and a crisp green salad.
- Finish with toasted pine nuts or extra lemon zest for additional flavor and texture.
