Pineapple-Glazed Rabbit with Mayonnaise-Mustard Sauce Recipe

Ingredients:

For the Pineapple Glaze:

  • 1 cup pineapple juice
  • 1/4 cup brown sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced
  • Salt and black pepper, to taste

For the Mayonnaise-Mustard Sauce:

  • 1/2 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste

For the Rabbit:

  • 1 whole rabbit, cleaned and cut into serving pieces
  • Salt and black pepper, to taste
  • 2 tablespoons olive oil
  • 2 cups fresh pineapple chunks

Instructions:

  1. Prepare the Pineapple Glaze:

    • In a saucepan, combine the pineapple juice, brown sugar, soy sauce, rice vinegar, grated ginger, minced garlic, salt, and black pepper. Bring to a simmer over medium heat, stirring occasionally, until the mixture has thickened slightly, about 10-15 minutes. Remove from heat and set aside.
  2. Make the Mayonnaise-Mustard Sauce:

    • In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, lemon juice, garlic powder, salt, and black pepper until smooth and well combined. Adjust seasoning to taste. Cover and refrigerate until ready to serve.
  3. Prepare the Rabbit:

    • Season the rabbit pieces generously with salt and black pepper. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the rabbit pieces and cook until browned on all sides, about 5-7 minutes per side.
  4. Glaze the Rabbit:

    • Pour the prepared pineapple glaze over the browned rabbit pieces, turning to coat evenly. Reduce heat to low, cover, and simmer for about 30-40 minutes, or until the rabbit is cooked through and tender, basting occasionally with the glaze.
  5. Grill the Pineapple Chunks:

    • Meanwhile, preheat a grill or grill pan over medium-high heat. Thread the fresh pineapple chunks onto skewers and grill for 2-3 minutes per side, or until lightly charred. Remove from the grill and set aside.
  6. Serve:

    • Arrange the glazed rabbit pieces on a serving platter. Serve with grilled pineapple skewers on the side and drizzle with the prepared mayonnaise-mustard sauce.
  7. Enjoy:

    • Enjoy this unique and flavorful dish of pineapple-glazed rabbit with grilled pineapple and tangy mayonnaise-mustard sauce. The combination of sweet pineapple, savory rabbit, and creamy sauce creates a delicious and memorable meal that's sure to impress!

Note: Adjust the sweetness of the pineapple glaze and the tanginess of the mayonnaise-mustard sauce according to your taste preferences. You can also add a touch of heat by incorporating red pepper flakes or hot sauce into the glaze or sauce.
