Kiwi, Corn, and Lobster Salsa with  Tortilla Chips

Ingredients:

  • 2 lobster tails, cooked and diced
  • 2 ears of corn, cooked and kernels removed
  • 2 ripe kiwis, peeled and diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • Zest of 1 lime
  • Salt and pepper, to taste
  • Tortilla chips, for serving

Instructions:

  1. Prepare the Ingredients:

    • Cook the lobster tails according to your preferred method (boil, steam, or grill) until they are fully cooked. Remove the meat from the shells and dice it into small pieces. Cook the corn ears in boiling water for 5-7 minutes, then remove the kernels from the cob. Peel and dice the kiwis. Finely chop the red onion, jalapeño pepper, and fresh cilantro.
  2. Combine the Ingredients:

    • In a large mixing bowl, combine the cooked and diced lobster tails, corn kernels, diced kiwis, chopped red onion, chopped jalapeño pepper, and chopped cilantro.
  3. Add Citrus Zest and Juice:

    • Add the zest of 1 lime and the juice of both limes to the bowl with the other ingredients. Season with salt and pepper to taste.
  4. Mix Well:

    • Gently toss all the ingredients together until they are well combined and evenly coated with the lime juice and zest.
  5. Chill and Marinate:

    • Cover the bowl with plastic wrap and refrigerate the salsa for at least 30 minutes to allow the flavors to meld together and the salsa to chill.
  6. Serve with Tortilla Chips:

    • When ready to serve, transfer the chilled kiwi, corn, and lobster salsa to a serving bowl. Arrange a platter of tortilla chips alongside the salsa bowl.
