Baked Salmon Sushi Cups

Ingredients:

  • 1 cup cooked sushi rice

  • 1/2 pound cooked salmon, flaked

  • 1/4 cup mayonnaise

  • 1 tablespoon sriracha (optional)

  • 1 teaspoon soy sauce

  • 2 sheets nori, cut into small squares

  • Sesame seeds, for garnish

  • Green onions, sliced, for garnish (Optional)

  • Bean Sprouts for garnish (Optional)

Instructions:

  1. Preheat oven to 375°F. Grease a muffin tin.

  2. Press sushi rice into the bottom of each cup, forming a base.

  3. Mix salmon with mayonnaise, sriracha, and soy sauce, and spoon onto the rice.

  4. Bake for 12-15 minutes until warm and slightly crispy.

  5. Top with nori, sesame seeds, and green onions before serving.
