Baked Salmon Sushi Cups

Ingredients:

1 cup cooked sushi rice

1/2 pound cooked salmon, flaked

1/4 cup mayonnaise

1 tablespoon sriracha (optional)

1 teaspoon soy sauce

2 sheets nori, cut into small squares

Sesame seeds, for garnish

Green onions, sliced, for garnish (Optional)

Bean Sprouts for garnish (Optional)
Instructions:

Preheat oven to 375°F. Grease a muffin tin.

Press sushi rice into the bottom of each cup, forming a base.

Mix salmon with mayonnaise, sriracha, and soy sauce, and spoon onto the rice.

Bake for 12-15 minutes until warm and slightly crispy.

Top with nori, sesame seeds, and green onions before serving.
