Steak Lettuce Wraps with Peanut Sauce

Ingredients:

  • 1 lb flank steak or sirloin steak

  • Salt and black pepper to taste

  • 1 tablespoon olive oil

  • 1 head butter lettuce or romaine, leaves separated

  • 1 cup shredded carrots

  • 1 red bell pepper, thinly sliced

  • 1/4 cup chopped fresh cilantro

  • 1/4 cup chopped peanuts (optional for garnish)

For the Peanut Sauce:

  • 1/3 cup creamy peanut butter

  • 2 tablespoons soy sauce

  • 1 tablespoon rice vinegar

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon sesame oil

  • 1 clove garlic, minced

  • 1/2 teaspoon grated fresh ginger

  • 2-3 tablespoons warm water (to thin as needed)

Instructions:

  1. Prepare the Steak:
Season steak with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat. Sear steak 3-4 minutes per side for medium-rare, or longer to your preference. Let rest 5 minutes, then thinly slice against the grain.

  2. Make the Peanut Sauce:
In a bowl, whisk together peanut butter, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger. Add warm water gradually until desired consistency is reached.

  3. Assemble the Wraps:
Place slices of steak onto lettuce leaves. Top with shredded carrots, bell peppers, cilantro, and a drizzle of peanut sauce. Garnish with chopped peanuts if desired.

Serve immediately for a light, flavorful meal.
