Pizzelle Cookie Recipe

Ingredients:

  • 3 large eggs

  • 3/4 cup granulated sugar

  • 1/2 cup unsalted butter, melted and cooled

  • 1 tsp vanilla extract (or anise extract for traditional flavor)

  • 1 3/4 cups all-purpose flour

  • 2 tsp baking powder

  • Optional: powdered sugar for dusting

Instructions:

  1. In a bowl, beat eggs and sugar until light and fluffy.

  2. Mix in melted butter and vanilla (or anise extract).

  3. In a separate bowl, whisk flour and baking powder. Gradually add to the wet mixture, stirring until smooth.

  4. Preheat a pizzelle iron according to the manufacturer’s instructions.

  5. Drop about 1 tablespoon of batter onto the center of each pattern on the iron. Close and cook 30–60 seconds, until golden brown.

  6. Carefully remove cookies and place on a cooling rack.

  7. Dust with powdered sugar if desired.

Optional: While warm, you can roll the pizzelles into cones or tubes for filled desserts.
