Pizzelle Cookie Recipe
Ingredients:

3 large eggs

3/4 cup granulated sugar

1/2 cup unsalted butter, melted and cooled

1 tsp vanilla extract (or anise extract for traditional flavor)

1 3/4 cups all-purpose flour

2 tsp baking powder

Optional: powdered sugar for dusting
Instructions:

In a bowl, beat eggs and sugar until light and fluffy.

Mix in melted butter and vanilla (or anise extract).

In a separate bowl, whisk flour and baking powder. Gradually add to the wet mixture, stirring until smooth.

Preheat a pizzelle iron according to the manufacturer’s instructions.

Drop about 1 tablespoon of batter onto the center of each pattern on the iron. Close and cook 30–60 seconds, until golden brown.

Carefully remove cookies and place on a cooling rack.

Dust with powdered sugar if desired.
Optional: While warm, you can roll the pizzelles into cones or tubes for filled desserts.
