Baked Oatmeal with Apples and Cinnamon Recipe

Ingredients:

  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1 ½ tsp ground cinnamon

  • ½ tsp salt

  • 1 ½ cups milk (dairy or non-dairy)

  • 2 large eggs

  • ¼ cup honey or maple syrup

  • 2 tbsp melted butter or coconut oil

  • 1 tsp vanilla extract

  • 2 cups diced apples (about 2 medium apples)

  • Optional: chopped nuts or raisins for topping

Instructions:

  1. Preheat oven to 375°F. Lightly grease a cast-iron skillet or 8×8-inch baking dish.

  2. In a large bowl, combine oats, baking powder, cinnamon, and salt.

  3. In another bowl, whisk together milk, eggs, honey, melted butter, and vanilla extract.

  4. Stir wet ingredients into dry ingredients until combined. Fold in diced apples.

  5. Pour mixture into prepared skillet or baking dish and spread evenly.

  6. Bake 35–40 minutes, until the top is golden and a toothpick inserted in the center comes out clean.

  7. Let cool slightly before serving. Drizzle with extra honey or maple syrup if desired.
