Pina Colada Mousse Recipe
Ingredients:

1 cup fresh pineapple, chopped

1/2 cup coconut milk

1/4 cup granulated sugar

1 tsp vanilla extract

1 tbsp rum or coconut rum (optional)

1 cup heavy cream

1 tbsp powdered sugar

Toasted coconut flakes for garnish
Instructions:

In a blender, combine pineapple, coconut milk, sugar, vanilla, and rum (if using). Blend until smooth.

In a chilled bowl, whip heavy cream with powdered sugar until stiff peaks form.

Gently fold the pineapple-coconut mixture into the whipped cream until fully combined.

Spoon mousse into serving glasses or bowls.

Chill in the refrigerator for at least 2 hours before serving.

Garnish with toasted coconut flakes and a small pineapple wedge, if desired.
