Pina Colada Mousse Recipe

Ingredients:

  • 1 cup fresh pineapple, chopped

  • 1/2 cup coconut milk

  • 1/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1 tbsp rum or coconut rum (optional)

  • 1 cup heavy cream

  • 1 tbsp powdered sugar

  • Toasted coconut flakes for garnish

Instructions:

  1. In a blender, combine pineapple, coconut milk, sugar, vanilla, and rum (if using). Blend until smooth.

  2. In a chilled bowl, whip heavy cream with powdered sugar until stiff peaks form.

  3. Gently fold the pineapple-coconut mixture into the whipped cream until fully combined.

  4. Spoon mousse into serving glasses or bowls.

  5. Chill in the refrigerator for at least 2 hours before serving.

  6. Garnish with toasted coconut flakes and a small pineapple wedge, if desired.
