Apfelstrudel Recipe
Ingredients
For the Dough:
- 1 ½ cups (190 g) all-purpose flour
- ½ teaspoon salt
- 2 tablespoons vegetable oil
- 1 large egg
- ½ cup (120 ml) warm water (plus a little more if needed)
For the Filling:
- 4 large apples (Granny Smith or another tart variety), peeled, cored, and thinly sliced
- ⅓ cup (65 g) granulated sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg (optional)
- ¼ cup (30 g) raisins
- ¼ cup (30 g) chopped walnuts or almonds (optional)
- 2 tablespoons lemon juice
- ¼ cup (30 g) breadcrumbs
- 2 tablespoons melted butter
For Assembly:
- 3 tablespoons melted butter (for brushing)
- Powdered sugar (for dusting)
Instructions
1. Prepare the Dough:
- In a large bowl, mix the flour and salt.
- Add the egg, oil, and warm water. Stir until the dough starts to come together.
- Knead the dough on a lightly floured surface for about 5 minutes until smooth and elastic. If the dough is too sticky, add a bit more flour.
- Shape the dough into a ball, cover it with a clean kitchen towel, and let it rest for 30 minutes at room temperature.
2. Prepare the Filling:
- In a large bowl, toss the sliced apples with sugar, cinnamon, nutmeg (if using), raisins, and lemon juice.
- In a small skillet, melt 2 tablespoons of butter over medium heat. Add the breadcrumbs and toast until golden brown, stirring constantly. Let it cool slightly.
3. Roll Out the Dough:
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- On a clean kitchen towel, lightly flour the surface and roll out the dough as thinly as possible, into a large rectangle (about 16x12 inches or 40x30 cm).
- Carefully stretch the dough by lifting the edges and letting gravity help, until it’s very thin.
4. Assemble the Strudel:
- Brush the dough with melted butter.
- Sprinkle the toasted breadcrumbs evenly over the dough, leaving a 1-inch (2.5 cm) border around the edges.
- Spread the apple mixture evenly over the breadcrumbs.
- Starting from the long edge of the dough, carefully roll up the strudel, using the towel to help you roll it as tightly as possible.
- Place the rolled strudel seam-side down on the prepared baking sheet.
- Brush the top with the remaining melted butter.
5. Bake the Strudel:
- Bake for 35-40 minutes, or until the strudel is golden brown and crispy.
- Let the strudel cool slightly before dusting with powdered sugar.
6. Serve:
- Serve warm or at room temperature. It’s delicious on its own or with a dollop of whipped cream or a scoop of vanilla ice cream.
Tips
- For an extra crispy crust, you can brush the strudel with a bit of milk before baking.
- You can also add a bit of vanilla extract to the apple filling for a hint of extra flavor.
- If you have time, let the dough rest longer to make it more pliable.
