Crockpot Veggie and Turkey Meatball Soup
Ingredients:
- 1 pound lean ground turkey
- 3 cups chopped kale or spinach
- 2 carrots, sliced
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
Instructions:
- In a mixing bowl, combine the ground turkey with salt and pepper, then shape into small meatballs.
- Place the meatballs, chopped kale or spinach, sliced carrots, diced onion, and minced garlic into the crockpot.
- Pour the low-sodium chicken broth over the ingredients.
- Sprinkle the dried oregano, dried basil, salt, and pepper over the mixture. Stir well to combine.
- Cook on low heat for 4-6 hours or until the meatballs are fully cooked through.
