Crockpot Veggie and Turkey Meatball Soup

Ingredients:

  • 1 pound lean ground turkey
  • 3 cups chopped kale or spinach
  • 2 carrots, sliced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, combine the ground turkey with salt and pepper, then shape into small meatballs.
  2. Place the meatballs, chopped kale or spinach, sliced carrots, diced onion, and minced garlic into the crockpot.
  3. Pour the low-sodium chicken broth over the ingredients.
  4. Sprinkle the dried oregano, dried basil, salt, and pepper over the mixture. Stir well to combine.
  5. Cook on low heat for 4-6 hours or until the meatballs are fully cooked through.
