Checkerboard Sable Cookie Recipe

Ingredients:

  • 2 ¼ cups all-purpose flour

  • 1 cup unsalted butter, softened

  • ¾ cup powdered sugar

  • 1 large egg

  • 1 tsp vanilla extract

  • ¼ tsp salt

  • 2 tbsp cocoa powder

Instructions:

  1. In a bowl, cream butter and powdered sugar until smooth.

  2. Mix in egg, vanilla, and salt.

  3. Add flour and stir until a soft dough forms.

  4. Divide dough in half.

  5. Leave one half plain; knead cocoa powder into the other half until fully incorporated.

  6. Shape each dough half into a rectangle block. Chill 30 minutes for easier cutting.

  7. Cut each block into long, even strips (about ½ inch thick).

  8. Arrange strips side-by-side in alternating colors to form a checker pattern (two light, two dark on top, then reversed underneath).

  9. Gently press strips together and wrap tightly in plastic. Chill 1 hour.

  10. Preheat oven to 350°F. Line baking sheets with parchment.

  11. Slice dough into ¼-inch cookies and place on baking sheets.

  12. Bake 10–12 minutes or until edges barely turn golden.

  13. Cool fully before serving.
