Checkerboard Sable Cookie Recipe
Ingredients:
-
2 ¼ cups all-purpose flour
-
1 cup unsalted butter, softened
-
¾ cup powdered sugar
-
1 large egg
-
1 tsp vanilla extract
-
¼ tsp salt
-
2 tbsp cocoa powder
Instructions:
-
In a bowl, cream butter and powdered sugar until smooth.
-
Mix in egg, vanilla, and salt.
-
Add flour and stir until a soft dough forms.
-
Divide dough in half.
-
Leave one half plain; knead cocoa powder into the other half until fully incorporated.
-
Shape each dough half into a rectangle block. Chill 30 minutes for easier cutting.
-
Cut each block into long, even strips (about ½ inch thick).
-
Arrange strips side-by-side in alternating colors to form a checker pattern (two light, two dark on top, then reversed underneath).
-
Gently press strips together and wrap tightly in plastic. Chill 1 hour.
-
Preheat oven to 350°F. Line baking sheets with parchment.
-
Slice dough into ¼-inch cookies and place on baking sheets.
-
Bake 10–12 minutes or until edges barely turn golden.
-
Cool fully before serving.
