Slow Cooker Chicken Tacos

Slow Cooker Chicken Tacos

Ingredients:

  • 2 pounds boneless, skinless chicken breasts or thighs

  • 1 cup salsa (your favorite kind)

  • 1 packet taco seasoning (or 2 tablespoons homemade)

  • 1/2 cup chicken broth

  • 1 tablespoon lime juice

  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, avocado, cilantro, jalapeños, etc.

  • Taco shells or tortillas

Instructions:

  1. Place chicken in the slow cooker.

  2. Sprinkle taco seasoning over the chicken.

  3. Pour salsa, chicken broth, and lime juice on top.

  4. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is very tender and easy to shred.

  5. Shred chicken with two forks directly in the slow cooker; stir to coat evenly in the sauce.

  6. Serve in taco shells or tortillas with your favorite toppings.
