Spanakopita Recipe

Ingredients:

  • 1 pound fresh spinach, chopped (or 16 oz frozen, thawed and drained)
  • 1 cup feta cheese, crumbled
  • 1/2 cup ricotta cheese
  • 2 eggs, beaten
  • 1/4 cup fresh dill, chopped
  • 1/4 cup green onions, chopped
  • Salt and pepper to taste
  • 1 package phyllo dough, thawed
  • 1/2 cup melted butter or olive oil

Instructions:

  1. Preheat Oven: Set to 375°F (190°C).
  2. Prepare Filling: In a bowl, mix spinach, feta, ricotta, eggs, dill, green onions, salt, and pepper.
  3. Layer Phyllo Dough: Brush a baking dish with butter/oil. Layer phyllo sheets, brushing each with butter/oil.
  4. Add Filling: Spread spinach mixture evenly. Top with more phyllo sheets, brushing each layer.
  5. Bake: Score the top and bake for 30–40 minutes until golden.
  6. Serve: Cool slightly and cut into squares or triangles.
