Spanakopita Recipe
Ingredients:
- 1 pound fresh spinach, chopped (or 16 oz frozen, thawed and drained)
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 2 eggs, beaten
- 1/4 cup fresh dill, chopped
- 1/4 cup green onions, chopped
- Salt and pepper to taste
- 1 package phyllo dough, thawed
- 1/2 cup melted butter or olive oil
Instructions:
- Preheat Oven: Set to 375°F (190°C).
- Prepare Filling: In a bowl, mix spinach, feta, ricotta, eggs, dill, green onions, salt, and pepper.
- Layer Phyllo Dough: Brush a baking dish with butter/oil. Layer phyllo sheets, brushing each with butter/oil.
- Add Filling: Spread spinach mixture evenly. Top with more phyllo sheets, brushing each layer.
- Bake: Score the top and bake for 30–40 minutes until golden.
- Serve: Cool slightly and cut into squares or triangles.
