Ingredients:
For the Cookies:
• 2 1/4 cups all-purpose flour
• 2 tablespoons cocoa powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup unsalted butter, softened
• 1 cup granulated sugar
• 1 large egg
• 1 teaspoon vanilla extract
• 1/2 cup buttermilk
• 2 teaspoons red food coloring
For the Filling:
• 1/2 cup unsalted butter, softened
• 1 1/2 cups powdered sugar
• 8 oz cream cheese, softened
• 1 teaspoon vanilla extract
For Garnish:
• Fresh blueberries and raspberries
Instructions:
• Preheat oven to 350°F and line baking sheets with parchment paper.
• In a bowl, sift flour, cocoa powder, baking soda, and salt.
• Cream butter and sugar until fluffy. Beat in egg and vanilla, followed by food coloring and buttermilk. Gradually mix in dry ingredients until combined.
• Drop batter by tablespoons onto the baking sheets and bake for 10–12 minutes. Cool completely.
• For the filling, beat butter, powdered sugar, cream cheese, and vanilla until smooth.
• Assemble cookies with filling in the center and garnish with berries.
