Turkey and Vegetable Meatloaf Recipe

Ingredients:

  • 1 pound ground turkey
  • 1 cup grated carrots
  • 1 cup grated zucchini (squeeze out excess water)
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • 1 egg
  • 2 tablespoons ketchup (plus extra for topping)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat Oven: Set to 375°F (190°C).
  2. Mix Ingredients: In a large bowl, combine turkey, vegetables, onion, garlic, breadcrumbs, egg, ketchup, Worcestershire sauce, thyme, salt, and pepper.
  3. Shape Meatloaf: Form into a loaf shape and place on a baking sheet or loaf pan. Top with ketchup if desired.
  4. Bake: Cook for 40–45 minutes or until internal temperature reaches 165°F (74°C).
  5. Serve: Serve once removed from oven with green beans or another vegetable.
