Feta Meatballs with Zucchini Noodles

Feta Meatballs with Zucchini Noodles

Ingredients:

  • 1 lb ground beef or lamb

  • 1/2 cup crumbled feta cheese

  • 2 garlic cloves, minced

  • 1/4 cup chopped fresh parsley

  • 1/4 cup breadcrumbs

  • 1 egg

  • Salt and black pepper to taste

  • 4 medium zucchinis, spiralized into noodles

  • 2 tablespoons olive oil

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon red pepper flakes (optional)

  • Juice of 1 lemon

Instructions:

  1. In a large bowl, combine ground meat, feta, garlic, parsley, breadcrumbs, egg, salt, and pepper. Mix until just combined. Form into small meatballs.

  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Cook meatballs in batches, turning to brown on all sides, until cooked through (about 8-10 minutes). Remove and set aside.

  3. In the same skillet, add another tablespoon olive oil. Sauté zucchini noodles for 2-3 minutes until just tender. Season with salt, oregano, and red pepper flakes if using.

  4. Squeeze lemon juice over the noodles and toss.

  5. Serve meatballs on a bed of zucchini noodles, garnished with extra parsley or a sprinkle of feta if desired.
