Feta Meatballs with Zucchini Noodles
Ingredients:

1 lb ground beef or lamb

1/2 cup crumbled feta cheese

2 garlic cloves, minced

1/4 cup chopped fresh parsley

1/4 cup breadcrumbs

1 egg
-
Salt and black pepper to taste

4 medium zucchinis, spiralized into noodles

2 tablespoons olive oil
-
1/2 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

Juice of 1 lemon
Instructions:

In a large bowl, combine ground meat, feta, garlic, parsley, breadcrumbs, egg, salt, and pepper. Mix until just combined. Form into small meatballs.

Heat 1 tablespoon olive oil in a skillet over medium heat. Cook meatballs in batches, turning to brown on all sides, until cooked through (about 8-10 minutes). Remove and set aside.

In the same skillet, add another tablespoon olive oil. Sauté zucchini noodles for 2-3 minutes until just tender. Season with salt, oregano, and red pepper flakes if using.

Squeeze lemon juice over the noodles and toss.

Serve meatballs on a bed of zucchini noodles, garnished with extra parsley or a sprinkle of feta if desired.
