Loukomades (Greek Donut Recipe)
Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 teaspoon salt
- 1 tablespoon granulated sugar
- 1 1/2 cups lukewarm water
For Frying:
- Vegetable oil, for frying
For the Syrup:
- 1 cup honey
- 1 cup water
- 1 cinnamon stick
- Zest of 1 lemon
- Zest of 1 orange
- Optional: Ground cinnamon for dusting

Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour, active dry yeast, salt, and granulated sugar. Mix well.
- Gradually add the lukewarm water to the dry ingredients, stirring continuously until a smooth batter forms. Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for about 1 hour, or until it doubles in size.

Heat the Oil:
- In a deep pot or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (180°C). Use enough oil to submerge the loukoumades completely while frying.

Form and Fry the Loukoumades:
- Once the dough has doubled in size, it will be bubbly and airy. Stir the batter gently to deflate it slightly.
- Using a spoon or small scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pot.
- Fry the loukoumades for about 2-3 minutes on each side, or until they are golden brown and puffed up. Use a slotted spoon to remove them from the oil and transfer them to a plate lined with paper towels to drain excess oil.

Make the Syrup:
- In a saucepan, combine the honey, water, cinnamon stick, lemon zest, and orange zest. Bring the mixture to a gentle boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes. Remove the saucepan from the heat and set aside to cool slightly.

Soak the Loukoumades:
- While the loukoumades are still warm, transfer them to a large bowl. Pour the warm syrup over the loukoumades, ensuring that they are evenly coated. Allow them to soak in the syrup for a few minutes.

Serve:
- Using a slotted spoon, transfer the loukoumades to a serving platter. Optionally, sprinkle them with ground cinnamon for extra flavor.
