Loukomades (Greek Donut Recipe)

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 1 tablespoon granulated sugar
  • 1 1/2 cups lukewarm water

For Frying:

  • Vegetable oil, for frying

For the Syrup:

  • 1 cup honey
  • 1 cup water
  • 1 cinnamon stick
  • Zest of 1 lemon
  • Zest of 1 orange
  • Optional: Ground cinnamon for dusting

Instructions:

  1. Prepare the Dough:

    • In a large mixing bowl, combine the all-purpose flour, active dry yeast, salt, and granulated sugar. Mix well.
    • Gradually add the lukewarm water to the dry ingredients, stirring continuously until a smooth batter forms. Cover the bowl with a clean kitchen towel and let the batter rest in a warm place for about 1 hour, or until it doubles in size.
  2. Heat the Oil:

    • In a deep pot or Dutch oven, heat the vegetable oil over medium-high heat until it reaches 350°F (180°C). Use enough oil to submerge the loukoumades completely while frying.
  3. Form and Fry the Loukoumades:

    • Once the dough has doubled in size, it will be bubbly and airy. Stir the batter gently to deflate it slightly.
    • Using a spoon or small scoop, carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pot.
    • Fry the loukoumades for about 2-3 minutes on each side, or until they are golden brown and puffed up. Use a slotted spoon to remove them from the oil and transfer them to a plate lined with paper towels to drain excess oil.
  4. Make the Syrup:

    • In a saucepan, combine the honey, water, cinnamon stick, lemon zest, and orange zest. Bring the mixture to a gentle boil over medium heat, then reduce the heat and let it simmer for 5-7 minutes. Remove the saucepan from the heat and set aside to cool slightly.
  5. Soak the Loukoumades:

    • While the loukoumades are still warm, transfer them to a large bowl. Pour the warm syrup over the loukoumades, ensuring that they are evenly coated. Allow them to soak in the syrup for a few minutes.
  6. Serve:

    • Using a slotted spoon, transfer the loukoumades to a serving platter. Optionally, sprinkle them with ground cinnamon for extra flavor.
  7. Enjoy:

    • Serve the loukoumades warm as a delightful Greek dessert or snack. Enjoy the crispy, golden exterior and fluffy interior, drenched in sweet syrup, for a truly indulgent treat!

Note: Loukoumades are best served fresh, but leftovers can be stored in an airtight container at room temperature for a day or two. If they become too soft, you can reheat them in the oven at 350°F (180°C) for a few minutes before serving.
