Cloud Egg Tacos Recipe

Ingredients:

  • 4 large eggs (separated into whites and yolks)

  • 4 strips of bacon or sausage (cooked and crumbled)

  • 1/2 cup guacamole

  • 1/4 cup sour cream

  • 1 cup shredded lettuce

  • 1 teaspoon taco seasoning

Instructions:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment.

  2. Whip egg whites to stiff peaks. Fold in taco seasoning. Spoon onto the sheet into "clouds" with a hollow center.

  3. Bake for 5 minutes, then carefully place yolks into the hollows. Bake 3–4 minutes more.

  4. Assemble tacos using egg clouds as shells. Fill with bacon/sausage, lettuce, guacamole, and sour cream.
